Easy Soy Sauce Chicken Wings




This is one of my favourite recipes on a regular night. I'd like to share it with you. It's a quick, simple and delicious homely meal (the sauce tastes so good when you mix in with cooked white rice!!) Enjoy!!

Ingredients:
700gram - 1kg chicken wings (I use free range chicken)
4 x garlic cloves crushed
2 slice ginger shredded (5mm thickness)
1 tbs salt
1 sprig of coriander for garnish (optional)
1tbs rice bran oil for cooking

Soy sauce mixture :
1/2 cup soy sauce or tamari sauce (if gluten intolerant)
1 tbs oyster sauce gluten free
2 x tsp sugar
few drops of sesame oil
1/2 cup water

Gather your ingredients

Fabulous Refreshing Lemon Loaf




Freshly beaming with pride from making my own brown rice flour!! It's the simple things! So anyway, I wanted to use it on a nice citrus recipe . This healthy refreshing loaf is great for morning / afternoon tea and gluten free .
The DIY grounded brown rice is not as fine and powdery as the one you can buy from the store but it still does a great job for baking .
The loaf is very refreshing and zesty. The edge turned out a bit grainy/crunchy (similar to low course polenta texture) however inside the loaf is a nice smooth texture .
The citrus flavor seemed to developed more intensity stored overnight in the refrigerator.
I love mine when it smear with creamy butter and served with a nice cup of tea. Divine ~ Enjoy!

Ingredients:

250grams brown rice flour ( DIY grounded brown rice flour click here )
210grams caster sugar
250gram butter at room temperature
2 tsp baking powder
4 eggs beaten
1x lemon juice and grated zest

Lemon sauce:
1 x lemon juice and grated zest
3 tbs caster sugar

Material :
Food Processor
1 x loaf pan
1 x chopstick
Baking paper


Get all ingredients ready for the loaf!!
Line your loaf pan with baking paper (to make the baking paper stick to the pan, grease with butter )


(Clockwise from top left) (1) Four eggs, (2) beat the eggs (3) lemon juce and (4) lemon zest.

Add all your ingredients into the food processor and blend for 10 seconds until smooth


Add blended mixture into the lined loaf pan. Shake the pan to smooth out the mixture



Pop into a preheated oven at 3500 F (1800 C) for about 40-45mins



While baking, you can prepared your lemon sauce. In a bowl add lemon juice, sugar and mix well until the sugar is dissolved. Keep grated lemon zest in a bowl for garnish.
Poke lemony loaf with a skewer or knife to see if loaf is ready (when it's baked perfectly, the knife / skewer should come out clean without any mixture clamp to it ) 1. Remove loaf from pan and pop onto a wire rack to cool. 2.Use a chop stick and poke cake with mini holes (shown in picture 3) 4. Use a teaspoon and spoon your lemon sauce on top of the loaf and sprinkle with grated lemon zest
Voila ~ Refreshing Lemony loaf is served ! I love mine smeared with butter Yummo ! 

Ground Brown Rice Flour (DIY)



Trying new gluten free recipes, I've come across numerous of ingredients that are really hard to find. And one of them is brown rice flour!!!!! The name sounds easy however both Mr Wong and I been searching high and low for this stuff.
I finally decided to make my own!
So I did a little experiment on the weekend. Grounding my own brown rice flour.

The process is quite simple yet quite tedious if you want it super fine and powdery. But the experience and result was well worth it - fresh and homemade!!!

I only grounded and sieved 3 times during the processes.  And I did bake something delicious out of it. Please see my Lemon loaf Recipe. Enjoy xoxo

What you need:
A bullet blender (Thanks Malaina for getting me this, it came in very handy)
A great sifter (see picture A) with the wheel handle makes things easier (I wouldn’t use pic B for this experiment you will have a sore arm after the 1st process but use it if you might want to build your biceps!) I'm not sure how long it will keep but so far i've stored it for a few weeks.

1 ½ cups of brown rice (260grams)
(used organic brown rice, it was on sale $3.50 for a 1kg I’m smiling ear to ears)
An airtight jug for storage



Get your gears out! And a nice glass of wine to help you get thru this ;)

 2 x mixer bowls and a great sifter


Top tip : be patient and don't overload the blender . Step 1: Fill 1/3 cup of rice grain into the bullet blender and process for 10 seconds, pause and repeat again. Place your freshly ground flour into the 1st bowl. Repeat process untill you've finished grounding 1 1/2 cups of rice.
Step 2:Add ground flour from the first bowl into sifter and sieve into 2nd bowl . Repeat steps (1) and (2)  3 times.


 
Voila ~Light and fine DIY brown rice flour. I've found the consistency of this flour is good enough to bake a cake !

Healthy Egg Flower Soup cooking at Work!!!


Ok my darling Readers, I have taken my cooking to the point of doing it at work!!!

I would love to share this easy simple healthy soup that you can make for a work lunch . With these easy steps this soup will only take about 8-10mins( depending on your microwave voltage, I'm using a 750 watt ). Please feel free to let me know how your soup goes. Enjoy J

*Make sure you have a microwave at work!! And some ingredients need to packed a night before so you can take to work in the morning

 

Ingredients

2x cups of chicken stock (my own homemade) 

2 x stoke of Green shallots (finely chopped)

1 x egg

A pinch of salt and pepper

You can also add more filling e.g. (fresh ice berg lettuce, fresh baby spinach, corn kernels, coriander, boiled peeled eggs, cooked noodle/ dumplings/meats add into the soup)


Our work kitchen!!! Things you need: a microwave, a large soup bowl , spoon and fork ! 





Ingredients: Chicken stock, egg and shallot

Microwave your soup in a bowl for about 4mins

Beat your egg

Add your beaten egg into the hot soup and add chopped shallot  ( you can add more fillings as suggested above)

Heat for another 4mins

Voila!! Fresh soup served  at work. Add salt and pepper. Enjoy ~

Perfect Cooked Rice



Cooking the perfect fluffy rice when you don't have a rice cooker!! Easy with these simple steps and will help you cooked perfect fluffy rice everytime. Enjoy :)

Ingredients:
2 x cups white rice ( I prefer to use medium grain. It delivers a very nice juicy plump texture)
Water

Add 2 x cups of rice into a large mix bowl and fill with water. Rices need to be washed and rinsed 3 times (this is very important for removing the starch !!!)
Add rice into a pot (my pot is 19cm wide). Add enough water (excuse my middle finger, but this is how i measure the water level) with your middle finger touching the top edge of the rice and water should be about 1.5cm up your finger. 




Cover your pot and pop onto the stove and cook on high til it's boiling for about 1-2mins. Then turn heat to low and simmer for about 15mins


After 15mins simmering, remove from heat , stir your rice
Pop the lid back into the pot and let it rest for 5 mins
 
 
Voila ! perfect fluffy plump rice served . Enjoy

Stir Crazy Fried Rice




What's for dinner ?!! It's a typical week night, you open your fridge and find there's various leftovers here and there. I had some roasted chicken, eggs and  few bits of fresh vegetable left in the cooler section . A quick tasty fried rice would be the perfect way to use up all your leftovers! I call this
 "Stir Crazy" fried - rice basically you have to stir fry all your ingredients! Enjoy

Ingredients

1 1/2 x cups of cooked rice ( how to cook your own rice click here )
1/2 roasted chicken shredded ( removed bones)
1 x red capscium (chopped)
1 x leek (chopped)3 x eggs beaten (freerange)
Oil for cooking
1/2 tsp salt
spig of coriander or chopped shallot for garnish (optional)

Sauce for the fried rice :
2 tbs dark soya sauce ( it's not as salty as normal soya sauce and gives food a nice dark glossy colour)
1 tbs oyster sauce
1/2 tsp sugar
1/4 tsp sesame oil

Prepared all your ingredients


To make your sauce, add these (above) into a small bowl and mix well

Heat up a wok on medium to high heat. Add 1 tbs oil and stir fry each ingredient separately: leek, capscium and eggs and store back into individual bowls 


Add 1-2 tbs oil in a clean wok , add your chicken and stir fry for 15 seconds. Add the rice and stir for about 1 min. At Lastly add all your cooked ingredients: leek , capscium and egg into the mixture and stir fry for a minute or so.





Make a well (hole) in your stir fry mixture and add your sauce mixture into the wok. Sprinkle salt and stir fry for a min

Voila ~ Stir crazy fried rice served!! Enjoy :)













Lemon Petite Fours

My Dear Readers, I’ve been on a cooking frenzy. I would love to show you my new beautiful dainty bundt pan from Nordic Ware Made in the USA J  and it was on sale half price at Victoria Basement!!! I just cannot resist a bargain. I used it in baking these delicious scrumptious Lemon Petite Fours. OMG!! Once you finish baking these, you just can’t stop eating them. You can see they didn’t have a chance to make it to the icing prep hehe ~ Oh well they are just so irresistible J Enjoy xoxo

Ingredients:
150gram Rice Flour
1/3 cup caster sugar
150gram melted butter (also need extra for buttering the bundt tray)
1 x lemon zest
3 x eggs (freerange)


Gather all your ingredients

Chop and melt butter in microwave for about 10secs

1 x lemon zest


Add eggs and sugar in a bowl

Whisk till it's creamy and pale

Sift your flour

Add 1/3 portion of the flour at a time to the egg mixture and fold, repeat twice until all the flour has been combined well


Add your lemon zest and melted butter into the mixture and combine well

Use clingwrap to cover your mixture and leave it for about 30mins. It should be creamy and oozing




Butter your bundt tray with melted butter and spoon mixture into tray. Pop into a preheated oven at 250 F. Bake for 7-8mins



Turn the pan upside down and Voila ~ Enjoy!
